Veg Box Experiment #3 - Top Ramen Mix Up
It seems Spring Greens are a theme of my Veg Box Experiments. This dish is also poor-student themed, with a dash of Americana.
Top Ramen Mix Up
Ingredients:
2 Chicken Flavored Top Ramen (Thanks RO!)
1 carrot, Julienne
1 small courgette/zucchini, sliced
Handful of Spring Greens, mouthful slices
1 clove garlic, sliced
Sesame Oil
Soy Sauce
Cayenne Pepper
Black Pepper
What I did/What You Could Do:
Place spring greens in boiling water. Boil to preferred crunch. (I know, technical.) Also place Ramen in boiling water and boil for 3 mins. Drain almost completely. Stir in 1 1/2 packets of Top Ramen Chicken Flavored seasoning. Set aside. Heat sesame oil in wok. Add garlic to sesame oil. Add corguette, carrot, and spring greens as well as soy sauce, cayenne pepper and black pepper to taste. Stir fry until veg is just tender. Serve over Top Ramen noodles.
Feeds 2. Forks or chopsticks depending on hunger or ability.

Veg Box Experiment #2
One of the things I love about my Abel & Cole fruit and veg box is the slight guilt that comes with it. In some ways, I feel less guilt-ridden: the produce I'm getting is organic, fair-trade, in season, local, and delivered to my door by a company that re-uses all their package or makes it biodegradable.
However, the guilt I feel is that I have to use everything that lands on my doorstep, but instead of getting panicked about it, it's been a joy to get creative.
For the past3 weeks or so, 'Spring Greens' have been arriving in my box. Without knowing or having the time to look up what 'spring greens' are exactly, I've been cooking them somewhere between kale, cabbage and bok choy. The latest mix was was:
Spring greens
Carrots
Celery
Spring Onions
Caldron Marinated Tofu Pieces
Seasame Oil
Soy sauce
Chili Powder
Alex thought it was damn good; I attributed it to growing up on home-made/really good Chinese dinners.

Veg Box Experiment #1
On Friday the 8th of May, we got our first Abel & Cole fruit and veg box delivered to our front door step. Our excitement was great. On Friday the 15th of May, our second fruit and veg box was delivered to our front door step. Our excitement was still great, and creativity lurked at the edges with a mysterious inclusion of "spring greens" to our box.
Not knowing how to cook "spring greens," I decided to approach it like kale, following Veggie Knitter's recommendation: How to Cook Kale.
The resulting dinner:
Moroccan cous-cous
Boiled Spring Greens, salted
w/ a Tofu Stir-fry on top (firm tofu, red & yellow peppers, mushrooms and veg box leeks)
Not bad for testing the waters of cooking in season. Next time, I'll drop the peppers and mushrooms (store bought, they were needing to be used quickly) and use our in-season courgettes (zucchinis) instead.
